- Sliced Cabbage – 4 cups
- Sliced Carrot – 2 cups
- Sliced Green Beans – 2 cups

- Sliced Green Pepper – 1 cup
- Cow Liver – (300g)
- 2kg of Chicken
- Vegetable Oil (200ml)
- Sweet Corn – 1 cup
- Sliced Onions – 1 cup
- Curry Powder (coloring spice) – 2 teaspoons
- Grounded Pepper – 1 teaspoon
- Salt
- Water.

Preparation of Fried Rice:
Most of the foods in Nigeria, you cook them by first parboiling the meat to be used and chicken is the most popular meat.
And the same preparation goes for fried rice of which the meal is best served along with fried or cooked meat.
You can cook your meat in a variety of ways, either by frying, steaming or cooking it.
Let’s make fried rice and chicken in the Nigerian style.
Step 1
Parboil your chicken and liver together adding all the spices to it, including (a teaspoon of salt, a half cup of sliced onions, a teaspoon of thyme, a teaspoon of curry, two seasoning cubes, each teaspoon of ginger and garlic powder).
The meat should be cooked for 10 to 15 minutes. Taste for salt and then bring out the meat and deep fry. Make sure to reserve the stock (meat water).

Chop the green beans, liver, carrot, cabbage and set them aside on a large tray.

Step 1
Set your cooking pot on the heat and allow it to dry, then pour 200 ml of vegetable oil into the pot.
PS: If you have fried the meat, it is best to use the same oil used in frying the meat. If not, then you can reduce the quantity to 200 ml.
Step 2
Allow it to heat, then add the sliced onions, and stir for about 1-2 minutes.
Step 3
Add the chopped carrots, green beans, sweet corn and chopped liver, then stir it.
Now add the meat stock (water from the meat), add the grounded pepper (optional), add 1 seasoning cube, and 1 teaspoon of salt, then stir and taste it. You may add more salt.

Stir for 1-2 mins, then add the cabbage and curry powder. (Curry adds the yellowish colour to the fried rice), add and stir until you are satisfied with the color.

Taste it, and if you’re satisfied with the taste, then add the green pepper and stir.
