GizDodo| How To Cook Peppered Gizzard and Ripe Plantain
Gizdodo is a delicious fusion of fried Gizzard and Dodo (alias for fried Plantain). The exact origin of Gizdodo is difficult to trace, but Nigerian Event caterers were the first to serve them alongside small chops on special occasions. Currently, the dish is making its way to becoming a staple for restaurants and homes.
Here is how to make Gizdodo with Bigmama spices:
Ingredients
- ½ kg of Gizzards (Chicken or turkey Gizzards)
- 2 Plantains Ripe
- Bigmama Chicken Seasoning
- 3 cherry Tomato
- 1 Large Onion (Diced)
- Thyme
- Curry powder
- Salt to Taste
- Green Bell Pepper, Yellow Bell Pepper and Orange bell peppers (Diced)
- 2 Habanero pepper(Minced or blended)
- Vegetable Oil (Enough for frying)

Wash the Gizzards thoroughly and ensure you peel away the yellow interior membrane. Cut into bite sizes and transfer to a pot.
Add Bigmama chicken seasoning powder, half of the diced onions, Curry powder, Thyme, and Salt to taste.
Add water to the same level as the Gizzards and cook for about 30 minutes or until tender.
Strain the Gizzards and fry till brown. Remove from Oil and set aside.
Peel and dice the Plantain, sprinkle with a pinch of salt and fry till golden brown. Set aside.
Stir-fry the rest of the Onions for a few minutes in 4 tablespoons of cooking oil. Add the diced Tomatoes and Minced Habanero pepper. Fry for 3 to 5 minutes.
Add the stock from the Gizzards or water. Adjust Bigmama Seasoning and salt according to personal preference.
Finally, add the Gizzards, the Fried Plantains, and the diced bell peppers. Stir together, leave to simmer for 3 to 5 minutes and your delicious Gizdodo is ready.
For garnish and colour, you can toss in diced onions, diced carrots, diced spring onions or any vegetable of choice.
Gizdodo is a perfect side to Rice, Couscous, Spaghetti or any other Pasta of your choice. Gizdodo can also serve as a full meal on its own.
